Ingredients

  • 2 pounds top sirloin steak cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon dried oregano
  • ½ teaspoon paprika
  • 1 ½ teaspoons ground cumin
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 red bell pepper cut into 1-inch pieces
  • 1 yellow bell pepper cut into 1-inch pieces
  • 1 green bell pepper cut into 1-inch pieces
  • ½ red onion cut into 1-inch pieces

Avocado Chimichurri

  • cup olive oil
  • 1 avocado
  • 3 garlic cloves
  • ½ cup chopped fresh parsley
  • ½ cup chopped fresh cilantro
  • 1 teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 tablespoon fresh lime juice

Instructions

  1. In a large bowl, add 2 pounds top sirloin steak cut into 1-inch cubes, 2 tablespoons olive oil, 1 tablespoon chili powder, ¼ teaspoon garlic powder, ¼ teaspoon onion powder, ¼ teaspoon dried oregano, ½ teaspoon paprika, 1 ½ teaspoons ground cumin, 1 teaspoon salt, and 1 teaspoon ground black pepper and toss until the meat is evenly coated in the spices.
  2. Thread the steak on the skewers, along with 1 red bell pepper cut into 1-inch pieces, 1 yellow bell pepper cut into 1-inch pieces, 1 green bell pepper cut into 1-inch pieces, and ½ red onion cut into 1-inch pieces .
  3. Grill the skewers over medium-high heat on the grill for 8-10 minutes until the meat is done to your liking. Remove the skewers from the grill and serve them with the avocado chimichurri.

Avocado Chimichurri

  1. Add ⅓ cup olive oil, 1 avocado, 3 garlic cloves, ½ cup chopped fresh parsley ½ cup chopped fresh cilantro, 1 teaspoon salt, ¼ teaspoon ground black pepper, and 1 tablespoon fresh lime juice to a blender and blend until smooth.
