Ingredients
- 2 pounds sweet potatoes, scrubbed well
- 3 tablespoons olive oil or avocado oil
- Kosher salt and black pepper, to taste
Instructions
- Oil the grill grates and preheat your grill to medium-high heat.
- Use a sharp knife to slice the potatoes 1/4-inch-thick rounds. Place the potatoes in a large bowl and toss with olive oil. Season with salt and pepper.
- Use tongs to place the sweet potatoes onto the hot grill. Cook for 4 to 7 minutes on each side or until the potatoes are tender and charred on each side. Check early to be safe, every grill is different.
- Transfer the potatoes to a plate or platter and serve warm.
- The grilled sweet potatoes are good plain, or you can serve them with your favorite sauces. See the blog post for ideas.
Cup of Yum
Notes
- If you don’t have a grill, you can use a grill pan. I don’t peel the sweet potatoes, but you certainly can.
