Grilled Vegetables in Foil

Ingredients

  • 1 zucchini (thickly sliced)
  • 1 yellow squash (thickly sliced)
  • ½ red onion (cut into chunks)
  • 1 red bell pepper (cut into chunks)
  • 1 green bell pepper (cut into chunks)
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 teaspoon minced garlic 
  • 1 tablespoon olive oil

Instructions

  1. Lay out a large sheet of foil.
  2. Mix the vegetables together on the foil.
  3. Then drizzle with the olive oil.
  4. Sprinkle with salt, pepper, and minced garlic on top of the vegetables.
  5. Fold up the foil, making a foil packet.
  6. Preheat the grill over medium high heat (approximately 400 degrees F). 
  7. Place packets on the grill for about 5 to 8 minute flipping once in the middle until the vegetables are tender.
  8. Carefully unwrap the foil packet and then the vegetables are ready to serve and enjoy!

Notes

  • *Refrigerate any leftovers in an airtight container for up to 5 days. 
  • *You can use any type of cooking oil that you prefer in this recipe.
