Done right, grilled veggies should be a bit charred, crispy, and super delicious, perfect as a main for a vegetarian or as the side dish for some grilled meats.

Ingredients

  • 12 button or crimini mushrooms
  • 1 fresh corn (One ear cut into 1-inch rounds)
  • 1 yellow squash or yellow pepper
  • 12 cherry tomatoes
  • 1 zucchini
  • 1 small red onion
  • 1 green bell pepper
  • 1/4 cup olive oil for drizzling
  • 1/2 Tablespoon salt (to taste)
  • 1/2 Tablespoon ground pepper (to taste)

Instructions

  1. Heat your grill to medium-high and spray with nonstick cooking spray.
  2. Cut the vegetables into similar sized chunks and spear onto 4 metal skewers.
  3. Drizzle with olive oil and season with salt and pepper. Grill the skewers for 8 minutes per side or until the vegetables are tender and lightly charred.
  4. Remove from the grill, season to taste, and serve with tzatziki, honey mustard, ranch dip or your favorite dressing.
