Grilled Zucchini and Squash

Delicious grilled zucchini and squash for a light low calorie side dish that pairs perfectly with meats, vegetables, burgers, fish, and more.

Ingredients

  • 2 tbsp avocado oil
  • 2 summer squash halved and cut into strips
  • 2 zucchini squash halved and cut into strips
  • 1 tsp celtic sea salt
  • 1 tsp fresh cracked black pepper
  • 1 tsp Italian Herbs

Instructions

  1. Preheat grill to 400 degrees Fahrenheit.
  2. Wash zucchini and squash well.
  3. Cut top and base tips from squash.
  4. Cut zucchini and squash 1/4" thick strips, lengthwise, using a sharp knife or mandoline.
  5. Brush squash with avocado oil and season generously with salt, pepper, and Italian herbs (or other seasonings as desired.)
  6. Using heat-resistant brush, lightly brush the grill grates with a bit of avocado oil (or lay down a strip of aluminum foil) so the squash doesn't stick to grill grates.
  7. Add squash to grill, cook 3-4 minutes per side, until browned on each side.
  8. Remove from grill and enjoy!
