Grilled Zucchini with Tahini Yogurt
Grilled Zucchini with Tahini Yogurt features tender zucchini slices grilled to a light char, served on a bed of creamy tahini-yogurt sauce seasoned with garlic, lemon, and spices. The dish offers a refreshing combination of smoky, tangy, and nutty flavors. Optional cherry tomatoes and fresh mint provide a bright, fresh finish, making it suitable as a light side or appetizer.
Ingredients
- 2 zucchini
- 2 tbsp olive oil
- 1 cup yogurt
- 2 tbsp tahini
- 1 clove garlic
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cherry tomato optional
- 1/4 cup mint optional, fresh
Instructions
- Preheat the grill to medium high and once the grates are hot, rub them with half of a potato to make them nonstick.
- Cut the zucchinis in half and then slice them into 1/4 inch thick pieces lengthwise.
- Brush the zucchini slices with olive oil on both sides.
- Prepare the sauce by mixing the yogurt, tahini, garlic, lemon juice, salt and pepper. Set it aside.
- Grill the zucchini slices for 2 to 4 minutes on each side until cooked.
- Spoon the yogurt tahini sauce on a serving platter and spread it to cover the platter. Then arrange the grilled zucchini on the sauce and top with tomatoes and fresh mint if desired.
Notes
- If outdoor grilling isn’t an option, use a grill pan or regular pan indoors to cook the zucchini slices.
- The tahini yogurt sauce can be prepared up to two days ahead to allow flavors to develop.
