Description

Zucchini is sliced lengthwise into thin pieces and brushed with olive oil before being grilled over medium-high heat until cooked through with slight grill marks. The tahini yogurt sauce is prepared by mixing yogurt and tahini with garlic, lemon juice, salt, and pepper, balancing creaminess with citrus and savory notes.

The grilled zucchini is arranged over the spread sauce, allowing the smoky flavors to blend with the tangy, nutty base. Cherry tomatoes and fresh mint can be added to brighten the presentation and add fresh texture contrast.

When outdoor grilling is unavailable, a grill pan or regular pan can serve to cook the zucchini slices indoors effectively. The tahini yogurt sauce benefits from being made up to two days in advance, allowing flavors to meld.

Ingredients

  • 2 zucchini
  • 2 tbsp olive oil
  • 1 cup yogurt
  • 2 tbsp tahini
  • 1 clove garlic
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cherry tomato optional
  • 1/4 cup mint optional, fresh

Instructions

  1. Preheat the grill to medium high and once the grates are hot, rub them with half of a potato to make them nonstick.
  2. Cut the zucchinis in half and then slice them into 1/4 inch thick pieces lengthwise.
  3. Brush the zucchini slices with olive oil on both sides.
  4. Prepare the sauce by mixing the yogurt, tahini, garlic, lemon juice, salt and pepper. Set it aside.
  5. Grill the zucchini slices for 2 to 4 minutes on each side until cooked.
  6. Spoon the yogurt tahini sauce on a serving platter and spread it to cover the platter. Then arrange the grilled zucchini on the sauce and top with tomatoes and fresh mint if desired.

Notes

  • If outdoor grilling isn’t an option, use a grill pan or regular pan indoors to cook the zucchini slices.
  • The tahini yogurt sauce can be prepared up to two days ahead to allow flavors to develop.
