Ingredients
- ¾ Cup unsalted butter softened
- ½ Cup granulated sugar
- 1 box Lime Jell-O gelatin
- 1 large egg
- 1 Tablespoon vanilla extract
- ½ Teaspoon neon green gel food coloring
- 1 Teaspoon baking powder
- 2 Cups all-purpose flour
- 24 Large Red Heart Sprinkles
Instructions
- Preheat the oven to 350 degrees F and line your baking sheet with parchment paper.
- In a medium mixing bowl, thoroughly cream together the butter, sugar, and Jell-O powder.
- Add the egg and vanilla extract and thoroughly mix again. Add the dye and mix well until no color streaks appear.
- Mix the baking powder into the flour and add it to the bowl. Mix well.
- Scoop cookie dough with a 2 Tablespoon scoop and place about 1-2 inches apart on cookie sheet. Place a red heart sprinkle in the middle of each cookie and bake for 12 minutes or until the cookies are just getting ready to be a very light golden color on the bottom.
- Remove and cool on wire rack.

Notes
- I used this Neon Green Food Coloring. You can find it on Amazon (affiliate link included) or at your local stores. You'll also need these Large Heart Sprinkles (on Amazon).
- These cookies overcook quickly. So, be careful even cooking them for one minute too long.
- Store cookies in airtight container at room temperature. Also delicious chilled.
