Grinder Sandwich
The Grinder Sandwich combines layers of salami, prosciutto, pepperoni, and cheese on Italian bread spread with Calabrian chili paste. A crisp salad mix of iceberg lettuce, sliced red onion, pepperoncini, and a tangy, garlicky mayonnaise dressing adds brightness and texture. Baking briefly melts the cheese and warms the meats, melding flavors while preserving the salad's crunch. Fresh tomato and parmesan topped on the warm sandwich provide additional texture and savory notes.
Ingredients
SALAD:
- 1/4 red onion thinly sliced
- 1/2 cup mayonnaise
- 2 tablespoons red wine vinegar
- 1 teaspoon oregano ground
- 1/4 teaspoon crushed red pepper
- 3 garlic minced cloves
- 1/2 iceberg lettuce head of
- 3 pepperoncinis sliced
- salt to taste, kosher salt
- black pepper to taste, kosher salt
SANDWICH:
- Italian bread or you could use hoagie loaves
- Calabrian chili paste
- 2 lices havarti cheese
- 2 lices Colby jack cheese
- 3 lices salami
- 3 lices prosciutto
- 3 lices pepperoni spicy
- Parmesan Cheese fresh
- 1 tomato
- 1 white onion
- black pepper
- kosher salt
- Parmesan Cheese to taste, freshly grated
Instructions
- Preheat the oven to 350 degrees F. Add the red onion to a bowl, pour some cold water over it, and let it sit. This will take away some of the bitterness. Whisk the mayonnaise, red wine vinegar, oregano, red pepper, and garlic cloves. Add in the lettuce, onion, and pepperoncini, and give it a taste. Adjust the salt and pepper to taste.
- Slice the bread in half and add Calabrian chili paste to both sides of the bread. Add the cheese to one of the halves. Add the meats to the other half. Transfer to the oven to bake for about 5 minutes, until the cheese is melted and the meat is warmed. Add the salad on top of the meat, along with a few slices of tomato, fresh onion, and parmesan cheese.

Notes
- Assemble the sandwich in advance and refrigerate, but add the salad fresh before reheating to avoid sogginess.
- You can substitute beef salami and turkey for pork products for a no-pork version.
- The salad can be served on its own with a protein for a lighter meal alternative.
