Grinder Sandwich
Description
The Grinder Sandwich offers a balanced assembly of spicy, savory cured meats and creamy cheeses layered inside a sturdy Italian bread enhanced with Calabrian chili paste. The salad dressing complements the rich meats with acidity and a touch of heat, combining mayonnaise, red wine vinegar, oregano, garlic, and crushed red pepper. Baking the sandwich briefly softens the bread, melts the cheese, and warms the meats without compromising the freshness of the salad placed on top.
Serving the sandwich immediately after baking ensures contrast between the warm, melted interior and crisp, tangy salad. Slices of fresh tomato and raw onion layered with freshly grated parmesan add juiciness and sharpness that balance the richness. This sandwich works well for casual meals or gatherings.
The original notes suggest assembling ahead is possible but recommend adding the salad fresh before serving to avoid sogginess. For a pork-free variation, beef salami and turkey can be used instead of pork meats. The salad alone can be served with a protein separately, if preferred.

- Slice the bread in half and add Calabrian chili paste to both sides of the bread. Add the cheese to one of the halves. Add the meats to the other half. Transfer to the oven to bake for about 5 minutes, until the cheese is melted and the meat is warmed. Add the salad on top of the meat, along with a few slices of tomato, fresh onion, and parmesan cheese.
