Ground Beef Burrito Bowl

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 green bell pepper sliced
  • 1/2 red onion sliced
  • 2 teaspoons oregano dried
  • salt plus more to taste, pinch
  • black pepper to taste, ground
  • 1 pound ground beef lean
  • 2 tablespoons taco seasoning mix
  • 1/3 cup water
  • 3 to 4 cups romaine lettuce chopped
  • 1 1/2 cups Steamed rice
  • 1 cup black beans rinsed and drained
  • 1/2 cup White Cheddar Cheese shredded
  • corn salsa
  • tomato salsa or pico de gallo
  • guacamole or sliced avocado
  • sour cream for serving (optional, lime wedges
  • cilantro
  • lime

Instructions

  1. In a large skillet, heat oil over medium-high heat until hot. Add peppers and onions, season with oregano, salt and pepper.
  2. Cook 5 to 6 minutes until slightly softened but still tender-crisp. Transfer to a bowl set aside.
  3. In the same skillet, add the ground beef. Cook until browned, drain excess grease, then sprinkle in the taco seasoning, stirring well. Add the water and stir, allowing it to simmer until the water is mostly absorbed. Remove from the heat.
  4. Divide the lettuce evenly between 4 bowls. To each bowl, add rice, beans, cooked peppers and onions, seasoned ground beef, cheese, pico de gallo, corn salsa and avocado. Top off with sour cream and cilantro, if desired and serve with lime wedges.
