Ground Beef Vegetable Soup

Ingredients

  • 1 pound lean ground beef
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 large carrot peeled and diced
  • 2 stalks celery diced
  • 2 medium potatoes peeled and cubed
  • 4 1/2 cups beef broth
  • 1 can diced tomatoes 15 ounces
  • 1 can crushed tomatoes 15 ounces
  • 1 1/2 teaspoons Worcestershire sauce 
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 2 cups frozen mixed vegetables
  • salt and black pepper to taste

Instructions

  1. In a large pot, cook ground beef over medium heat until browned. Drain excess grease.
  2. Add onion, garlic, carrots, and celery to the pot. Cook until vegetables are softened, about 5 minutes.
  3. Add potatoes, beef broth, diced and crushed tomatoes, Worcestershire, basil, and oregano to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Stir in frozen mixed vegetables and continue to simmer for another 10 minutes or until all vegetables are tender. Season with salt and black pepper to taste.
