Ingredients
- ½ cup chicken broth
- ¼ cup hoisin sauce
- 1 tablespoon dry sherry can sub Shaoxing wine
- 2 teaspoon white vinegar
- 1 teaspoon cornstarch
- 2 tablespoon high-heat cooking oil such as grape seed or avocado oil
- 3 cloves garlic minced
- 1 small onion finely chopped
- 1 tablespoon minced ginger
- 1 pound ground turkey
- 1 each red and yellow pepper diced
- 1 cup chopped scallions (about ½ bunch)
- 1 tablespoon sesame seeds toasted if desired
Instructions
- Whisk together the broth, hoisin, sherry, vinegar, and cornstarch in a small dish.
- Heat the oil in a large, heavy skillet or wok over high heat. Add the garlic, onion, and ginger and stir-fry until the onion is starting to soften and turns translucent, about 3 minutes.
- Add the turkey and break it apart with a spatula. Cook, crumbling the meat as it cooks until it is only pink in a couple of spots, about 5 to 6 minutes.
- Add in the peppers and the sauce and cook, stirring often, until the peppers are tender and the sauce is thick, 5 to 6 minutes.
- Stir in the scallions and remove the skillet from the heat. Sprinkle the stir fry with sesame seeds before serving.
Cup of Yum
Notes
- Leftovers can be kept in a sealed container in the refrigerator for up to three days.
- Make sure to reheat until steaming hot.
- The stir-fry can be reheated in a non-stick skillet, covered.
- If the sauce thickens too much, add a splash of broth.
- It can also be heated in the microwave on high heat for 2 minutes per portion.
