Ingredients
- 2 scallions , cut into 4
- 2 cloves garlic
- ½ green bell pepper , seeded and cut into large chunks
- 5 tablespoons cilantro leaves
- 3 avocados (ripe), peeled and cut into pieces
- ½ cup corn oil
- salt
- pepper
- 1 lemon , freshly squeezed
- 2 tablespoons vinegar (optional)

Instructions
- Place the scallions, garlic, green bell pepper, cilantro and avocado in the jug of a blender.
- While mixing, add the oil, lemon juice, and vinegar if using, until obtaining a smooth and even mixture.
- Season with salt and pepper.
- Keep in the fridge until it's time to serve.
