Guasacaca is a popular sauce in Venezuela made with avocado, garlic, onion, cilantro, parsley, bell pepper, oil, lemon and vinegar.

Ingredients

  • 2 scallions , cut into 4
  • 2 cloves garlic
  • ½ green bell pepper , seeded and cut into large chunks
  • 5 tablespoons cilantro leaves
  • 3 avocados (ripe), peeled and cut into pieces
  • ½ cup corn oil
  • salt
  • pepper
  • 1 lemon , freshly squeezed
  • 2 tablespoons vinegar (optional)

Instructions

  1. Place the scallions, garlic, green bell pepper, cilantro and avocado in the jug of a blender.
  2. While mixing, add the oil, lemon juice, and vinegar if using, until obtaining a smooth and even mixture.
  3. Season with salt and pepper.
  4. Keep in the fridge until it's time to serve.
