Guinness Brownies with Chocolate Ganache

Perfect for St. Patrick's Day these chocolate Guinness brownies are moist and tasty with extra flavor from the booze.

Ingredients

Brownies
  • 1 box fudge brownie mix
  • 1/4 cup Guinness Stout
  • 1/2 cup oil
  • 1 egg
Ganache
  • 10 ounces semi sweet chocolate chips
  • 4 Tablespoons butter
  • 4 Tablespoons Guinness Stout
  • 1/2 cup powdered sugar

Instructions

  1. Spray a 13 x 9 inch baking pan with cooking spray. Preheat the oven to 350 F.
  2. Put the brownie mix in a bowl and add the Guinness, oil and egg. Stir until well blended.
  3. Pour into the prepared pan and spread out evenly. Bake for 24-30 minutes, until a toothpick inserted into the brownies comes out almost clean.
  4. Let brownies cook in pan.
  5. When they are cool put the chocolate chips, butter and Guinness in a microwavable bowl.
  6. Microwave for 30 seconds and then remove and stir. Repeat, stirring every 30 seconds until the chocolate chips and butter start to melt.
  7. Stir until the chocolate chips are completely melted and smooth. Add the powdered sugar and stir again until smooth.
  8. Pour the ganache over top of the cooled brownies and spread out to the edges. Let cool and cut into squares.

Notes

  • This makes thin, fudgy brownies. You could make the brownies in a smaller 9 x 9 pan. That would make thicker brownies and need a longer cooking time of 35-40 minutes.
