Guinness Lamb Stew

Ingredients

  • 2 Tablespoon olive oil
  • 1 1/2 lbs. boneless leg of lamb cubed
  • 2 Tablespoon flour
  • 1 onion chopped
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 cups Guinness Stout
  • 1 1/1 tablespoon tomato paste
  • 2 cups beef broth
  • 1 bay leaf
  • 1 teaspoon Dijon mustard
  • 1 potato peeled and cubed
  • 2 carrots sliced
  • parsley to garnish

Instructions

    Cup of Yum
  1. Heat oil in sauce pan over medium heat.
  2. Add lamb and cook until brown on all sides.
  3. Sprinkle lamb with flour and mix well.
  4. Add onion, salt, pepper, thyme, rosemary and cook for another 5 minutes.
  5. Stir in the Guinness, tomato paste, beef broth, bay leaf and Dijon mustard and bring to a boil.
  6. Reduce heat, cover and let simmer for 1 1/2 hours.
  7. Stir in the potato and carrot, cover and cook for 45 minutes.
  8. Spoon into bowls and sprinkle with parsley.
