Halloween Bean Dip

Ingredients

  • 29 ounce can black beans rinsed and drained
  • ¾ cup Ro-Tel Original drained
  • ⅓ cup red onion finely diced
  • 1 orange bell pepper diced
  • 1 Jalapeño seeded and minced
  • ⅓ cup cilantro chopped
  • 1 large clove garlic minced
  • 1 lime zested and juiced
  • ¾ teaspoon kosher salt
  • ½ teaspoon black pepper
SERVE WITH:
  • blue corn tortilla chips

Instructions

  1. Combine the black beans, Ro-Tel, red onion, bell pepper, jalapeno, cilantro, garlic, lime zest and juice in a large bowl. Toss to combine.
  2. Season the bean dip with salt and pepper and mix well.
  3. Taste for seasonings and adjust as needed with extra salt or pepper, lime or even hot sauce.
