Ingredients
Chocolate Mousse
- 6 ounces chocolate chips
- 1 cup heavy cream
Tombstone Cookies
- 6 tablespoons butter at room temperature
- ½ cup granulated sugar
- 1 large egg
- ½ teaspoon vanilla extract
- 1 ¼ cups all-purpose flour
- 1 ½ teaspoons baking powder
- 1 teaspoon poppy seeds
- ½ teaspoon salt
- Black decorating gel
Assemble
- ¼ cup Oreo cookie crumbs
Instructions
Chocolate Mousse
- Heat the chocolate and ½ cup of the cream in a large-sized bowl in your microwave, stirring after each 20-second interval, until the chocolate is melted. Set aside until it is cool to the touch, about 10 minutes.
- Beat the remaining ½ cup of cream using an electric beater until stiff peaks form.
- Gently fold the whipped cream into the cooled chocolate. Divide the mousse between 6 small jars.
Tombstone Cookies
- Preheat your oven to 350 degrees. In a medium-sized bowl cream together the butter, sugar, egg, and vanilla using an electric mixer.
- In another medium-sized bowl, whisk the flour, baking powder, poppy seeds, and salt.
- Slowly add the dry ingredients to the wet ingredients and mix until combined.
- Roll out half the dough ½ inch thick on a lightly floured surface. Cut out tombstone shapes, making the tombstones slightly pointed at the bottom end to help them hold in place the mousse. You will have more dough than you need for the tombstones so make Halloween cut-out cookies from the remaining dough.
- Bake on cookie sheets for 6-8 minutes, or until lightly browned on the bottom. Remove from the oven and cool completely. Once the cookies are completely cool, use a black gel decorating pen to draw RIP on the top of each tombstone cookie.
Assemble
- Scoop about 1 teaspoon of cookie crumbs on top of each chocolate mousse and place a tombstone cookie in each.

- The nutritional information is calculated for the chocolate mousse only and not the cookies.
