Ingredients

  • 1 cup unsalted butter softened to room temperature
  • 1 cup brown sugar packed
  • ¾ cup granulated sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 2 ¼ cups all purpose flour
  • ¾ cup cocoa powder
  • 1 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 teaspoon instant coffee granules optional
  • 1 ¼ cup Halloween m&m candies
  • 1 cup semi sweet chocolate chips
  • 50- 60 Candy Eyeballs a mixture of small, medium and large

Instructions

    Cup of Yum
  1. In a large bowl combine softened butter, brown sugar, and white sugar together on medium speed with a hand mixer or stand mixer until blended and fluffy. Add in the eggs and vanilla and mix until fully blended for another minute. Set aside.
  2. In a medium bowl whisk together flour, cocoa powder, baking powder, salt, and coffee granules until well blended.
  3. Add the flour mixture to the butter sugar mixture a little at a time and mix on low speed until full combined, about 3 minutes. Stir in the chocolate chips and m&m candies with a wooden spoon until evenly combined.
  4. Cover the bowl with plastic wrap and refrigerate it for 30 minutes.
  5. Preheat the oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper and scoop cookie dough into 1 1/2 inch cookie balls spacing them out 1-2 inches apart, then flatten with your fingers to even them out a bit. Add candy eyes to the top of the cookies using a combination of small, medium or large eyes to create one of a kind monsters!
  6. Bake for 8-10 minutes until the edges are set and the middle is soft, they will not look done but they will set once out, don’t over bake!
  7. Remove them from the oven and let them cool on the cookie sheet for 3-5 minutes before transferring them to a cooling rack.
  8. Store in an air tight container at room temperature for up to a week, if they last that long!
