Ham and Bean Soup Recipe

Ingredients

  • 2 medium carrots sliced into coins
  • 2 ribs celery chopped
  • 2 tbsp butter
  • 1/2 tbsp onion minced
  • 4 (15.5 oz) cans great northern beans rinsed and drained
  • 4 c chicken broth low sodium
  • 2 c cooked cubed ham
  • 1/2 tsp minced garlic  minced
  • 1/4 tsp pepper
  • garlic salt (with parsley flakes) to taste
  • 1 bay leaf

Instructions

  1. Use butter to sauté the carrots and celery in a large sauce pan until tender.
  2. Add onion, beans, broth, ham, garlic, pepper, garlic salt and bay leaf to the pot.
  3. Add in the sautéed carrots and celery.
  4. Bring to a boil, then reduce the heat and simmer for 15 minutes.
  5. Remove the bay leaf before serving.
