Ham and Cheese Pasta Bake from the South Tyrol

This easy ham and cheese pasta bake from the Italian mountains is traditionally made with homemade pasta squares but you can also use ready lasagne sheets instead. A super family baked pasta recipe made with pantry staples.

To make the pasta dough

  • 7 oz Italian '00' soft wheat flour (200g) or all purpose flour
  • 2 eggs (large)
  • 1 pinch salt

To finish the dish

  • 7 oz Asiago cheese (200g) or gruyere, fontina etc cut into cubes
  • 5 oz cooked ham (150g) cut into cubes. Leftover holiday ham works really well in this recipe.
  • 2.5 oz butter (75g)
  • salt to taste

Instructions

To make the pasta squares

  1. See step by step instructions below this recipe card to make pasta sheets
  2. Cut each sheet of pasta into 3x3cm (1.2in) squares. Place ready squares on a floured surface until all are ready. The squares don't need to be perfect just more or less the same size.

Finish, bake and serve.

  1. Cut the ham and cheese into small cubes. Melt the butter in a small saucepan.
  2. Cook the pasta squares in boiling salted water for 1-2 minutes until al dente. Drain and put in a bowl with melted butter and some cheese cubes. Add salt and mix carefully.
  3. Butter an oven dish and then make a layer of pasta squares in it. Cover this with pieces of ham and cheese and then make another layer and cover this in ham and cheese too.
  4. Bake your ham and cheese pasta squares in a preheated oven at 180°c (356°f) for about 15 minutes or until the cheese has melted and the top has browned slightly. Let your baked pasta rest for 5 minutes before serving.

Notes

  • This recipe can be made with any good melting cheese such as Asiago, Gruyere or Fontina.
  • Instead of making fresh pasta, you can use ready made lasagne sheets. Partly boil them in salted water, drain and cool. Then cut into small squares.
  • Leftovers can be kept in the fridge in a sealed container for 1-2 days and reheated in the microwave.
