Ingredients

  • 2 tablespoons olive oil
  • 1 cup onion diced
  • 3/4 cup carrot diced
  • 3/4 cup celery diced
  • 2 cloves garlic minced
  • 6 cups chicken broth low-sodium
  • 2 cups ham cooked, diced
  • 1 cup potato diced
  • 1 teaspoon thyme dried
  • salt to taste
  • black pepper to taste
  • 1/2 cup parsley chopped, fresh

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery, and sauté until softened, about 5 minutes.
  2. Add garlic and cook until fragrant, about 1 minute. Pour in chicken broth, ham, potatoes, and thyme. Bring to a boil, then reduce heat and simmer for 20 minutes, or until potatoes are tender.
  3. Season with salt and pepper. Stir in fresh parsley just before serving.
