Ham Swiss and Egg Cups

HAM SWISS AND EGG CUPS are so good and they make a great make ahead breakfast full of protein!

Ingredients

  • 12 lices ham deli
  • ¼ cup onion chopped
  • 3 swiss cheese cut in 4 equal parts, ultra thin slices
  • 9 egg beaten
  • ¾ cup milk
  • ½ tsp salt
  • ½ tsp black pepper
  • green onion optional, for garnish

Instructions

  1. preheat oven to 350 degrees F
  2. spray a muffin tin with cooking spray
  3. lay the ham slices in the muffin cups pressing down to form ham cups
  4. spread onion into the bottom of each cup
  5. lay a piece of Swiss on top of the onions in each cup
  6. in a medium bowl whip the eggs and milk together along with the salt and pepper
  7. pour the egg mixture into each cup
  8. bake in the oven for 10 to 15 minutes or until firm in the centers
  9. run a knife around the edge of the ham and then remove
  10. garnish with chopped green onion
  11. Enjoy!
