Hamburger and Rice Casserole

Make something different with your ground beef tonight - a super flavorful hamburger rice casserole made without cream of mushroom soup or cheese. It's an easy dinner that the whole family loves!

Ingredients

  • 1 tablespoon olive oil
  • 1 ½ pounds lean ground beef I used 90%
  • ½ cup onion chopped
  • 3 garlic cloves minced
  • 2 ½ cups white jasmine rice uncooked
  • 21 ounces low sodium beef broth (2) 10.5 ounce cans
  • 21 ounces low sodium French Onion soup (2) 10.5 ounce cans
  • ⅓ cup water
  • ¾ cup unsalted butter 1 ½ sticks

Instructions

  1. Preheat the oven to 425° F and lightly grease a 9x13 casserole dish with cooking spray.
  2. In a large skillet, heat a tablespoon of olive oil then add the ground beef and onions and brown over medium-high heat for 5-7 minutes breaking the meat into small pieces as it sautés until the meat is no longer pink and the onion is soft .
  3. Then add the minced garlic and saute until fragrant.
  4. Drain any excess grease from the meat mixture if necessary.
  5. In the prepared casserole dish, add the cooked ground beef mixture, uncooked rice, beef broth, French onion soup, and water and stir to combine.
  6. Place the slices of butter evenly around the top of the casserole and cover the dish with foil.
  7. Bake for 30 minutes then remove the foil and bake for an additional 30 minutes or until the rice is cooked completely.
  8. After baking, fluff the rice with a fork.
  9. Garnish with parsley or sliced green onions if desired.

Notes

  • Add any favorite chopped fresh vegetables like diced mushrooms, green peas, diced red bell peppers, or diced zucchini. They don't have to be cooked before adding them.
  • Instead of ground beef, Use ground turkey or ground chicken.
  • Use brown rice but add ½ cup of water and it may take a little longer to bake.
  • Use any long-grain white rice like basmati
  • Store cooled leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat in the microwave or reheat in the oven at 350° F until heated through. Place a cold dish in a cold oven and then turn the oven on.
