Ingredients

  • 1 lb lean ground beef
  • 2 cups water
  • 4 cups reduced sodium beef broth
  • 15 ounces fire roasted diced tomatoes with liquid (can use regular diced as well)
  • 3 medium carrots, peeled and chopped
  • 2 medium russet or golden potatoes, peeled and but into 1 inch cubes
  • 1 medium yellow onion, peeled and diced
  • 2 stalks celery, ends trimmed and chopped
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ tsp oregano
  • 1 cup frozen green beans
