Ingredients

  • 21 oz lamb , finely chopped
  • 2 cups white rice
  • 6 tablespoons pine nuts , or blanched almonds
  • ½ teaspoon ground cinnamon
  • ½ teaspoon nutmeg , freshly grated
  • 4 cups meat or chicken broth
  • 2 oz butter
  • salt
  • ½ teaspoon white pepper
  • ½ teaspoon chilli powder
  • 3 tablespoons parsley , chopped

Instructions

  1. Roast the pine nuts or almonds, and set them aside.
  2. Heat the butter over medium heat in a Dutch oven and brown the meat, stirring constantly.
  3. Add the rice, salt and spices and mix well.
  4. Cook for 2 minutes.
  5. Add the hot broth mix and bring to the boil.
  6. As soon as it comes to a boil, cover and simmer over low heat for 25 minutes.
  7. Add the pine nuts or almonds, and mix well.
  8. Sprinkle with parsley.
  9. Serve immediately with pita bread.
