Hashweh is a classic Levantine dish made with ground lamb and rice, often used as a stuffing for poultry or meat.

Ingredients
- 21 oz lamb , finely chopped
- 2 cups white rice
- 6 tablespoons pine nuts , or blanched almonds
- ½ teaspoon ground cinnamon
- ½ teaspoon nutmeg , freshly grated
- 4 cups meat or chicken broth
- 2 oz butter
- salt
- ½ teaspoon white pepper
- ½ teaspoon chilli powder
- 3 tablespoons parsley , chopped

Instructions
- Roast the pine nuts or almonds, and set them aside.
- Heat the butter over medium heat in a Dutch oven and brown the meat, stirring constantly.
- Add the rice, salt and spices and mix well.
- Cook for 2 minutes.
- Add the hot broth mix and bring to the boil.
- As soon as it comes to a boil, cover and simmer over low heat for 25 minutes.
- Add the pine nuts or almonds, and mix well.
- Sprinkle with parsley.
- Serve immediately with pita bread.
