Ingredients
- 8 thick slices French brioche bread
- 2 eggs
- 230 ml or 1 cup milk (cow or nut, I tried this recipe with both and it came out perfect every time)
- 1 teaspoon cinnamon
- 2 teaspoons vanilla extract
- 2 teaspoons coconut oil
- maple syrup and fresh blueberries, or any other toppings of your choice, to serve
Instructions
- Prepare the batter by mixing eggs with milk, cinnamon and vanilla extract. Heat coconut oil in a large skillet over medium heat.
- Coat a slice of brioche in batter from both sides. Avoid soaking! You just want to coat it with batter. Repeat with the rest of brioche slices.
- Place them on a skillet and cook for about 2 minutes or until golden brown. Serve with maple syrup and fresh blueberries, or any other toppings of your choice. Enjoy!
