Ingredients

  • 8 thick slices French brioche bread
  • 2 eggs
  • 230 ml or 1 cup milk (cow or nut, I tried this recipe with both and it came out perfect every time)
  • 1 teaspoon cinnamon
  • 2 teaspoons vanilla extract
  • 2 teaspoons coconut oil
  • maple syrup and fresh blueberries, or any other toppings of your choice, to serve

Instructions

    Cup of Yum
  1. Prepare the batter by mixing eggs with milk, cinnamon and vanilla extract. Heat coconut oil in a large skillet over medium heat.
  2. Coat a slice of brioche in batter from both sides. Avoid soaking! You just want to coat it with batter. Repeat with the rest of brioche slices.
  3. Place them on a skillet and cook for about 2 minutes or until golden brown. Serve with maple syrup and fresh blueberries, or any other toppings of your choice. Enjoy!

Notes

  • You can make the batter one day ahead and refrigerate it until ready to use.
