Ingredients
- 1 tablespoon olive or vegetable oil
- 6 large eggs
- 15 ounce can black beans rinsed and drained
- 8 corn tortillas
- 4 ounces cotija cheese crumbled
- 1 avocado pitted, peeled, and sliced
- chopped fresh cilantro
Instructions
- In a large skillet, heat the oil over medium-high heat and scramble the eggs. Meanwhile, in a small saucepan, warm up the beans over medium-low heat.
- Meanwhile, warm the tortillas on the stove-top or in the microwave.
- Distribute the eggs evenly over the tortillas, top with some black beans, then sprinkle on some cheese. Top with avocado slices and chopped cilantro and serve.
