Healthy Blueberry Muffins

These Healthy Blueberry Muffins are light and fluffy and naturally sweetened with fruit - no added sugar, and they are SO easy to make.

Ingredients

  • 230 ml skimmed milk
  • 1 egg
  • 2 tablespoon coconut oil melted
  • 1 teaspoon vanilla extract
  • 75 g liquid sweetener
  • 120 g plain flour
  • 120 g oats
  • 1 pinch sea salt
  • 1 tablespoon baking powder
  • 200 g blueberries

Instructions

  1. Preheat your oven to 200°C/180°C(fan)/400°F/Gas 6.
  2. In a bowl combine 230 ml Skimmed milk, 1 Egg, 2 tablespoon Coconut oil, 1 teaspoon Vanilla extract and 75 g Liquid sweetener.
  3. In a large mixing bowl, add 120 g Plain flour, 120 g Oats, 1 pinch Sea salt and 1 tablespoon Baking powder.
  4. Add the milk and egg mixture and combine well.
  5. Add 200 g Blueberries and mix in.
  6. Divide the batter into a greased muffin tin and put into the oven for 20 minutes.
  7. Allow to cool slightly before transferring to a cooling rack.

Notes

  • Make sure you save some blueberries to dot on the top of the muffins to make them look nice.
  • You could sprinkle some oats on top for presentation too.
  • Make sure you don't over-mix the flour into the rest of the ingredients, otherwise the muffins will be too dense
  • For an added warm flavour, add 0.5 tablespoon of cinnamon to the mixture.
