Ingredients

For the Sausage Patties:
  • 1 lb ground turkey or chicken or pork, if preferred
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil for cooking
For the Bowls:
  • 4 large eggs
  • 2 cups spinach or kale
  • 1 avocado optional
  • fresh herbs

Instructions

  1. Make the Sausage Patties: In a mixing bowl, combine the ground turkey, garlic powder, onion powder, dried thyme, paprika, salt, and pepper. Mix well and form the mixture into 8 small patties.
  2. Cook the Patties: Heat olive oil in a skillet over medium heat. Add the sausage patties and cook for about 5-6 minutes on each side or until golden brown and cooked through. Remove from the skillet and set aside.
  3. Fry the Eggs: In the same skillet, crack the eggs and fry them to your desired doneness (sunny side up, over easy, etc.). Season with a pinch of salt and pepper.
  4. Assemble the Bowls: In each bowl, add a portion of cooked quinoa or brown rice as the base. Top with sautéed spinach or kale, two sausage patties, and a fried egg.
  5. Garnish and Serve: Add sliced avocado on top and sprinkle with fresh herbs if desired. Serve warm and enjoy your nutritious breakfast bowls!

Notes

  • Feel free to add other toppings like cherry tomatoes, sautéed mushrooms, or shredded cheese for extra flavor and nutrients.
  • You can prepare the sausage patties in advance and store them in the refrigerator or freezer for quick breakfasts throughout the week.
