Healthy Coffee Creamer
This homemade coffee creamer combines soaked almonds, water, coconut oil, and optional dates to create a smooth, creamy liquid that adds richness and subtle sweetness to coffee. The blending and straining produce a nut milk that can foam when fresh, providing a dairy-free alternative with a mild nutty and coconut flavor. It can be refrigerated for convenience and used immediately to enhance café-style drinks at home.
Ingredients
- 1/2 cup almond soaked 6-8 hours & rinsed well, raw
- 2 cups water filtered
- 1 Tablespoon coconut oil
- 1 or 2 Medjool dates (pitted; optional for sweetness)
Instructions
- Combine all of the ingredients in a blender, and blend until very smooth and creamy.
- Position the nut milk bag over a large bowl, then pour the blender contents into the bag to strain.
- Squeeze well, until only dry almond pulp remains in the bag. (Reserve the leftover almond pulp for another recipe!)
- Transfer the almond milk to a sealed container, and store in the fridge for up to a week.
Notes
- Fresh almond milk creamer foams well for latte or cafe au lait when used immediately.
- Leftover almond pulp can be saved and repurposed in other recipes to minimize waste.
- Store creamer in a sealed container in the refrigerator for up to one week.
