Healthy Greek Yogurt Curried Chicken Salad

This healthy Greek yogurt curried chicken salad is full of flavor and is perfect for those days when you don't want to turn on the oven or cook over the stove. It's made with fat-free Greek yogurt, shredded chicken breast, chutney, shallots, and lots of dried fruit.

Ingredients

  • 1 pound shredded chicken breast
  • 2 green onions thinly sliced, just the green part
  • 1/2 cup fat-free Greek yogurt
  • 1/4 cup diced dried apricots
  • 1/4 cup raisins
  • 2 tablespoons Major Grey's chutney
  • 1 tablespoon curry powder
  • 1 tablespoon minced shallots
  • 1/2 teaspoon kosher salt
  • To serve: toasted bread or lettuce cups

Instructions

  1. In a large bowl add all ingredients and stir to combine.
  2. Taste and season with kosher salt if desired. If you want more curry flavor you can add more curry powder.
  3. To serve, add to toasted bread or serve in lettuce cups.
