Healthy Lemon Herb Baked Zucchini

Ingredients

  • 3 large courgettes sliced in a food processor
  • 1 large clove garlic pressed or thinly sliced
  • 1 tsp sea salt
  • 1/2 tsp. fresh ground pepper
  • Juice of 1/2 - 1 lemon
  • 2 tbsp. olive oil
  • 2 tbsp fresh thyme

Instructions

  1. Preheat the oven to 425F
  2. Line a baking tray with parchment paper, and coat with some olive oil.
  3. Into a bowl add all your ingredients.  Stir till well combined and evenly coated.
  4. Bake in the oven for around 15-20 minutes. Enjoy as a side dish.  It is great for meal prep!
