Healthy Quinoa and Feta Salad

Ingredients

  • 1 cup quinoa
  • 2 cup water
  • 2 green onions finely chopped
  • 1 cup cherry tomatoes sliced
  • ½ cup corn
  • 1 yellow pepper cut in small cubes
  • ½ cup Kalamata black olives
  • 200 g feta cheese diced
  • 1 tsp lemon zest
  • 10 leaves fresh mint minced
  • ¼ cup olive oil
  • 1 tbsp white balsamic vinegar
  • 1 tbsp lemon juice
  • 1 tbsp maple syrup
  • salt and pepper from the mill

Instructions

  1. Bring the water to a boil, then add the quinoa.
  2. Reduce to low heat, cover, and simmer for 15 minutes.
  3. Remove from heat and let stand for 5 minutes.
  4. Fluff quinoa with a fork. Let cool.
  5. In a large bowl combine the vegetables, feta cheese, mint, oil, and balsamic vinegar. Season with salt and pepper.
  6. Add quinoa and stir to combine.
  7. Refrigerate salad for 1 hour
  8. Serve cold.
