Healthy Sausage Gravy Breakfast Casserole

The Healthy Sausage Gravy Breakfast Casserole layers a crescent roll dough base topped with seasoned egg whites, cooked ground turkey mixed with sausage-flavored gravy, and shredded cheddar and mozzarella cheeses. It bakes to create a savory casserole combining a soft doughy crust, fluffy eggs, hearty turkey, and creamy gravy with melted cheese.

Ingredients

  • 20 oz. ground turkey raw, 99% lean
  • 1 .64-oz. country gravy mix sausage flavor, packs
  • 1 oz. crescent rolls I used Pillsbury, package
  • 2 cups egg whites, 480g
  • 1/2 cup cheddar cheese shredded, 56g
  • 1/4 cup mozzarella cheese 28g
  • 1 Tbsp ranch seasoning mix or 1 tsp of EACH: onion powder, garlic powder, salt and 1/4 tsp pepper

  1. Preheat the oven to 350 degrees F. Spray a 9x13” baking dish with nonstick cooking spray. 
For the Egg White Pizza:
  1. Open crescent rolls and place along the bottom of the dish. Press down to spread and even out along the bottom and part of the sides of the dish. Try to seal the seams as much as possible.
  2. Shake egg white carton up and pour slowly over the crescent roll dough. Sprinkle with ranch seasoning mix and bake for 18-20 minutes, or until egg whites are cooked throughout. 
For the Turkey:
  1. In a large skillet, add the ground turkey. Cook on medium heat until no longer pink, breaking into smaller pieces with a wooden spoon as you go. 
For the Sausage Gravy:
  1. Meanwhile, prepare the country gravy according to package directions. I did this in the microwave. 
Assembly:
  1. Mix the ground turkey and sausage gravy together, then add evenly on top of the egg white pizza. Sprinkle it with cheese. 
  2. Bake for 5 minutes or until the cheese has melted. Take out, let cool for 5-10 minutes and enjoy! 

Notes

  • Use gluten-free crescent roll dough to make this casserole gluten-free.
  • Substitute dairy-free cheese to make it dairy-free.
  • Reheat leftovers in an air fryer to maintain a crispy exterior and soft interior; oven or microwave are suitable alternatives.
