Ingredients

  • ½ cup cottage cheese blended until smooth
  • 4 oz low fat cream cheese
  • ¾ cup shredded Mozzarella cheese
  • ½ cup Romano cheese
  • 1 teaspoon minced garlic 
  • ¼ teaspoon red pepper flakes
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 4 oz canned diced green chiles
  • 14 oz can quartered artichoke hearts drained
  • 10 oz frozen spinach thawed and drained

Instructions

  1. Preheat oven to 375℉. Spray a 2-quart oven safe dish with nonstick spray.
  2. Cream together the cottage cheese, cream cheese in an electric mixer.
  3. Mix in the mozzarella, Romano cheese until combined.
  4. Add in the garlic, red pepper flakes, salt and pepper, green chiles, artichoke hearts, and spinach mix until incorporated.
  5. Fold in the green chiles, artichoke hearts, and spinach.
  6. Pour the mixture into the baking dish and cook for 30 minutes or until all of the cheese is melted and the top is light brown.
  7. Serve with desired veggies, crackers or chips. Enjoy!
