Healthy Spinach, Mushroom, & Egg Stuffed Peppers Recipe

Healthy spinach, mushroom, and egg stuffed bell peppers are an easy baked low-carb breakfast recipe.

Ingredients

  • 2 bell peppers
  • 6 eggs
  • 1/2 Cup baby bella mushrooms sliced
  • 1 Cup spinach
  • 1/4 Cup green onions sliced

Instructions

  1. Preheat your oven to 400°F.
  2. Slice your bell peppers and remove the seeds. Place them in a baking dish.
  3. Crack your eggs in to a small bowl and whisk together. Evenly distribute among each pepper.
  4. Top with spinach, mushrooms, and green onions.
  5. Place baking dish and oven and cook for 25-35 minutes, until eggs are set.
  6. Serve immediately.
