Healthy Strawberry Chia Jam
This Healthy Strawberry Chia Jam blends fresh chopped strawberries with lemon juice, honey, and chia seeds to create a naturally thickened spread without added pectin. Cooking the fruit down releases pectin from the strawberries, while chia seeds provide extra gel-like texture. The jam balances fresh berry flavor and light sweetness and sets up after cooling, making it suitable for toast, yogurt, or desserts.
Ingredients
- 2 cups strawberry roughly chopped (300g
- 4 teaspoons water
- 2 teaspoons lemon juice fresh
- 4 teaspoons honey or agave
- 4 teaspoons chia seeds
Instructions
- Place the strawberries, water, and lemon juice into a large saucepan and bring to a boil.
- Once boiling, reduce the heat to medium and cook, stirring frequently, until the strawberries begin to break down, about 5 minutes. Remove from heat and mash them with a potato masher.
- Return to medium heat, stir in the honey and chia seeds, and simmer until thick, about 5 minutes.
- Transfer to an air-tight container and let cool to room temperature on the counter. The jam will thicken a lot.
- Refrigerate and devour when desired!
Notes
- Keep the jam refrigerated and consume within one week for best freshness.
