Instructions

  1. Place the strawberries, water, and lemon juice into a large saucepan and bring to a boil.
  2. Once boiling, reduce the heat to medium and cook, stirring frequently, until the strawberries begin to break down, about 5 minutes. Remove from heat and mash them with a potato masher.
  3. Return to medium heat, stir in the honey and chia seeds, and simmer until thick, about 5 minutes.
  4. Transfer to an air-tight container and let cool to room temperature on the counter. The jam will thicken a lot.
  5. Refrigerate and devour when desired!
