Healthy Zucchini Fritters

These zucchini fritters are unbelievably easy to make and a fun way to sneak veggies into your diet. Fried until golden brown, they are best served with a generous dollop of sour cream and fresh herbs.

Ingredients

  • 2 cup zucchini grated, and squeezed to drain
  • 1/2 cup whole wheat flour
  • 2 eggs
  • 1 tsp salt
  • 3 tbsp oil for cooking

Instructions

  1. Combine zucchini together with flour, eggs, and salt in a bowl.
  2. Preheat oil in a skillet. Spoon small amounts of mixture into the pan. 
  3. Fry on each side until golden brown.
  4. Serve with sour cream and fresh herbs.
