These zucchini fritters are unbelievably easy to make and a fun way to sneak veggies into your diet. Fried until golden brown, they are best served with a generous dollop of sour cream and fresh herbs.

Ingredients
- 2 cup zucchini grated, and squeezed to drain
- 1/2 cup whole wheat flour
- 2 eggs
- 1 tsp salt
- 3 tbsp oil for cooking
Instructions
- Combine zucchini together with flour, eggs, and salt in a bowl.
- Preheat oil in a skillet. Spoon small amounts of mixture into the pan.
- Fry on each side until golden brown.
- Serve with sour cream and fresh herbs.
