Hearts of Palm Pasta Recipe

This easy hearts of palm pasta recipe is vegetarian, low carb and gluten free! It features a rich and delicious spinach cream sauce for a decadent yet healthy pasta dish that's ready to enjoy in under 30 minutes.

Ingredients

  • 24 ounces hearts of palm pasta drained and rinsed
  • 1 tablespoon olive oil
  • 3-4 cloves garlic minced
  • 16 ounces fresh baby spinach chopped
  • 8 ounces cream cheese cut into cubes
  • 1 cup milk
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • ¼ - ½ teaspoon crushed red pepper
  • 1/8 teaspoon ground nutmeg

Instructions

  1. Place the hearts of palm noodles in a colander and rinse. Then shake the colander and allow the hearts of palm to dry as you prep the spinach pasta sauce.
  2. Set a large sauté pan over medium heat. Add the olive oil and garlic. Sauté the garlic for 1 to 2 minutes as you roughly chop the spinach.
  3. Stir the spinach into the pan, a couple handfuls at a time, until it starts to wilt down. Once all the chopped spinach is in the pan, add in the cream cheese, milk, Parmesan cheese, dried Italian seasoning, crushed red pepper, and ground nutmeg.
  4. Stir and allow the sauce to simmer as the cream cheese and Parmesan melt. Simmer approximately 5 minutes until the sauce starts to thicken to a “heavy cream” consistency.
  5. Stir in the hearts of palm pasta and simmer another 1 to 2 minutes to warm the noodles. Serve warm with an extra sprinkling of Parmesan cheese.
