Hearts of Palm Soup

The special flavors of this easy, one pot hearts of palm soup make it the perfect dish to impress guests at a dinner party or just enjoy as a light lunch.

Ingredients

  • 4 cans of hearts of palm, drained and sliced
  • 1 cup of heavy cream
  • 1 cup of Parmesan cheese
  • 3 cups of chicken stock, or water
  • 1-2 prigs of fresh thyme
  • salt and pepper to taste

Instructions

  1. Add the sliced hearts of palm into a medium pan
  2. Add the stock and the thyme and bring to a boil. Let it boil for 5 minutes. Turn off the heat. 
  3. Remove the thyme and discard, then blend the cooked hearts of palm in the liquid using an immersion blender. 
  4. Add the Parmesan cheese and the cream, then stir to combine.
