Hearty Vegetarian Chili
This vegetarian chili combines sautéed baby bella mushrooms, onions, carrots, bell peppers, and garlic with fire roasted tomatoes and two types of beans, spiced with chili powder, cumin, smoked paprika, and jalapeños. The slow simmer melds the ingredients into a thick, satisfying chili that delivers layered vegetable flavors, smoky heat, and a filling texture without meat.
