- 2 tablespoons olive oil
- 8 oz baby bella mushroom finely chopped
- 1 yellow onion diced
- 1 carrot diced, large
- 1 red bell pepper cored, seeded, and diced
- 3 cloves garlic minced
- 28 oz fire roasted tomatoes
- 30 oz black beans rinsed and drained, 2 cans
- 15 oz small red beans rinsed and drained, or pinto beans, 1 can
- 1 cup vegetable broth
- 1/3 cup jalapeno pepper deli-sliced, roughly chopped, tamed
- 2 tablespoons chili powder
- 1 tablespoon cumin ground
- 1/2 teaspoon smoked paprika
- 1 1/2 teaspoons kosher salt
- 1/4 teaspoon black pepper

Instructions
- In a large pot, heat the olive oil over medium high heat. Add the chopped mushrooms and cook until tender, about 5 minutes, stirring occasionally.
