Ingredients
Heirloom Tomato Cucumber Salad
- 3 heirloom tomatoes, sliced
- 1/2 English cucumber, seeded and sliced into half moons
- 1/4 cup fresh basil leaves, use more or less depending on what you like
- Thinly sliced red onion the amount used is up to you
- Kosher salt and freshly ground black pepper to taste
Peach Vinaigrette
- 1 peach, peeled and diced
- 2 tablespoons white balsamic vinegar
- 2 tablespoons water
- 1 tablespoon olive oil
- 1 tablespoon fresh basil approximately 4-5 leaves
- Kosher salt and freshly ground black pepper to taste
Instructions
Peach Vinaigrette
- Combine all of the ingredients for the vinaigrette in a blender and blend until smooth.
- Pour into a jar or other airtight container and refrigerate until ready to use.

- Arrange the tomatoes, cucumber, red onion and basil on a serving plate.
- Season with kosher salt, black pepper and some of the peach vinaigrette.
- Serve immediately.
