Hemp Protein Bars - Chocolate Cranberry

These chocolatey delicious bars are super easy to make, and they're incredibly nutritious and protein-packed. Perfect for back to school lunches and snacks.

Ingredients

  • 1 cup almond flour
  • 2 cups dates pitted
  • ½ cup almond butter
  • ½ cup cacao or cocoa powder
  • ½ cup hemp seeds
  • ½ teaspoon salt sea salt or kosher
  • ¼ cup cranberries dried

Instructions

  1. Prepare a nine-inch square baking pan by lining with parchment paper
  2. Put all ingredients, except for the cranberries, into the food processor, and pulse until combined.
  3. Add cranberries and pulse a couple of times until they are incorporated
  4. Press mixture evenly into prepared pan
  5. Refrigerate uncovered, overnight
  6. Cut into bars

Notes

  • These bars will seem a bit soft at first, but let them sit in the fridge uncovered, overnight. They will firm up nicely.
  • Substitute any nut or seed butter for the almond butter for the same result.
