  • 2 puff pastry sheets
  • 20 gms Parmesan Cheese finely grated, 1 tbsp; Parmigiano Reggiano
Filling
  • 5 lices sandwich bread
  • 20 gms Parmesan Cheese finely grated, 1 tbsp; Parmigiano Reggiano
  • 3 tbsp mixed fresh herbs chives, thyme, sage, rosemary, parsley, finely chopped
  • 1 tbsp milk
  • 2 tbsp extra virgin olive oil
  • 1 shallot
  • salt to taste
  • black pepper to taste

  • 450 gms chicken breast 1 lb
  • 1 spinach wilted, bunch
  • 2 tbsp honey mustard or dijon mustard
  • 200 ml cream
  • ¼ cup white wine
  • 1 tbsp extra virgin olive oil
  • black pepper to taste
  • salt to taste
