- 20 gms Parmesan Cheese finely grated, 1 tbsp; Parmigiano Reggiano
Filling
- 5 lices sandwich bread
- 20 gms Parmesan Cheese finely grated, 1 tbsp; Parmigiano Reggiano
- 3 tbsp mixed fresh herbs chives, thyme, sage, rosemary, parsley, finely chopped
- 1 tbsp milk
- 2 tbsp extra virgin olive oil
- 1 shallot
- salt to taste

- 2 tbsp honey mustard or dijon mustard
